Easy recipe, my Mum used to make it for me...I still love it.
SHOT 1: For 2-4 people, you need 2 zucchini, 1 tin of tuna (in water or in oil; steak or flakes), some olives, 2 slices of bread (white or brown or seeded) or half a ciabatta, half a spoon of curry powder (my personal twist), Parmesan cheese, extra-virgin olive oil, 3 tomatoes (or a tin of chopped tomatoes), half of an onion, salt and pepper.

SHOT 2: Cut the zucchini in two halves, carve out the middle soft bit using a teaspoon. For the stuffing mix tuna, olives, a spoon of extra-virgin olive oil, half a teaspoon of curry powder (optional), a bit of salt, 2 slices of bread chopped into little pieces.
SHOT 3: Chop half an onion and fry it in a bit of olive oil, then add the chopped tomatoes and cook it for 10 minutes (just to make a nice sauce), add a bit of salt. Mix the stuffing all together; bring some water to a boil and put the zucchini in the water for 10 minutes (just to soften the skin).
SHOT 4: You can now stuff the zucchini just by placing the stuffing into the empty zucchini skin. Put a layer of tomato sauce in a baking tray, then place the stuffed zucchini on top. Cover them with some more tomato sauce and a sprinkle of oil (2 full tablespoons). Bake the zucchini in the oven for 45 minutes at the temperature of 180C or 400F.
SHOT 5: The Stuffed Zucchini are ready to be served! You can have them as a starter or main. You can put some of the extra tomato sauce on slices of bread. This makes a nice little starter to go with the zucchini. I hope you try to make this dish...let me know how it goes!!!
