Ginger Guacamole by U.Larosa

Shot 1: Guacamole is a Mexican dip; it's very easy to make and very nutritious. You need a ripe avocado, half a lemon, grated ginger (my twist), extra-virgin olive oil, salt and pepper.  You can add chopped garlic, but I prefer the lighter version with no garlic.

Shot 2: Cut the avocado in two halves (it makes it easier to peel), remove the stone in the middle with a spoon and then peel the avocado skin by hand. 


Shot 3: Chop the avocado, add 2 tablespoons of extra-virgin olive oil, grate the ginger, add salt and start mashing the ingredients with a fork (you do not need a blender if the avocado is ripe and soft).

SHOT 4: You can now add some black pepper (and/or some chilli if you like it spicy).

 
SHOT 5: The guacamole is now ready; it makes a nice, fresh side dish/dip or a starter. I usually put a bit of olive oil and balsamic vinegar on my plate and dip my bread in it before putting guacamole on top. You can serve it with tomato salad and a bit of fresh coriander (cilantro for North American readers).  Enjoy!
