Aubergine (eggplant) Frittelle by U .Larosa

Frittelle so called because they are fried, in italian fritto means fried!

SHOT 1: You need 2 aubergines (eggplants), 150g of flour, spices, salt and pepper.


SHOT 2: Boil the aubergine in salt and water.







SHOT 3: Mix the flour with the aubergine, add spices (I use curry powder, as usual), salt if needed ( you can always adjust salt once it is all cooked).

SHOT 4: Fry the mix in a frying pan with some veg oil (I usually do not use olive oil for frying, apparently it is healthier to use other veg oil instead, like sunflower oil...). Make sure they are all cooked and crispy.



SHOT 5: Your Frittelle are ready to be served as a starter maybe with some pickles or any dip you like. Scialativi!
